When you first start exploring a transition to a plant-based diet, beautiful, abundant salads can be a life-saver!  They are quick, easy, accessible, and delicious. Caesar Salad, in particular, has become a bit of a comfort food, and something that even the most carnivorous of us will have enjoyed on many occasions. However as a "budding vegan", it won't be long after you drop the meat and dairy before you start questioning how you can still enjoy your favorite green salad, in the most health-conscious way possible.

 

Whether using romaine, spinach, or kale, salads are packed with nutrients.  If you eat them regularly, you will likely have higher levels of a host of powerful antioxidants (vitamin C and E, folic acid, lycopene, and alpha- and beta- carotene). It's a shame to slather all that goodness with the heaps of dairy, oil, and refined sugar that are hidden in most salad dressings.

 

The solution?  Make your own!!  It's super easy, and you'll actually save time by not having to read label after label in efforts to keep oil, dairy, and sugar off the menu and off of your nutritious greens. 

 

Here is a quick and simple recipe for a 7 ingredient, raw vegan, oil-free, sugar-free, "Almond Caesar" dressing that is sure to become a staple in your plant-based lifestyle:

 

Almond Caesar Dressing

Perfect on any salad or even as a vegetable dip, this simple recipe will be a hit with the whole family.

Ingredients
  • 1/2 Cup Raw Almonds (purchase here)

  • 3 Tbsp Lemon Juice

  • 3 Tbsp Liquid Aminos (purchase here)

  • 2 Tbsp Mustard (purchase here)

  • 3 Cloves of Garlic

  • 1/3 Cup Nutritional Yeast (purchase here)

  • 1 Cup Water

 

Instructions
